Aim of research Elaboration of kumiss in industry based on pure crops of lactic-acid bacteria. Hypothesis Based on pure crops of lactic-acid bacteria that were chosen from different ecological niche, will be cultivated a leaven to produce kumiss that has fuctional similarity: prevention and treatment of pulmonary, renal, osseous(bone) tuberculosis, chronic bronchitis, dry pleurisy, gastrointestinal and cardiovascular illnesses. Stages of research 1. Make working collection of microorganisms 2. Study biochemical and physicochemical properties of microorganisms 3. Formation of consortium as starter in producing kumiss 4. Study properties of starter Methods of research Work done with use of classical and modern microbiologic methods Newness of research and range of self-dependence For the first time was created a leaven to produce kumiss in a laboratory and working environment using both mare’s and cow’s milk. Author had studied all microbiological methods used in research. Practical part of work was done by myself. Results and conclusion of research 1. Chosen and identified culture of lactic-acid bacteria and yeasts from different kinds of kumiss. 2. Many crops of lactic-acid bacteria have antibacterial activity 3. We got positive results of test ripening of whole pasteurized cow’s milk 4. Making kumiss based on cow’s milk is more advantageous. Area of practical usage Cultivated leaven can provide with ceiling high-quality product. And because of deficit of high-quality products, medicines and vitamins, this drink will have a wide distribution. Also it will help to find new markets.
